After going gluten free I feared I wouldn’t be able to eat good food like pancakes again until I found out how many gluten free products are out there.

We can find breads, pizza crusts, pancakes and more now all gluten free that taste very good.

In this article I share one of my gluten free pancake recipes. This one has Ancient Nutrition Bone Broth protein powder to give it that protein pump which still makes it Paleo overall.

Paleo Gluten Free Protein Pancakes

Prep Time: 5 minutes | Cook Time: 7 minutes | Ready in: 15 minutes
Yield: 4 medium sized pancakes

Ingredients

Here’s a very quick video via Instagram (flip slider) I make for them, this one has the blueberries, and there’s written directions below too:

Directions

  1. In a medium mixing bowl, stir together the pancake mix, bone broth protein powder and coconut oil
  2. (optional) add in blueberries and mix gently
  3. Put a frying pan on the stove top and turn to medium high (7 out of 10) and let it get hot
  4. Put down coconut oil spray, or other coconut oil, to grease pan
  5. Put 2 tablespoons of pancake mix down not in the center of the pan, leaving room for 3 more (in the video I only did one tablespoon to make 5, either works fine I just found doing 4 makes them a little bigger and more satisfying)
  6. Add in 2 tablespoon sized portions 3 more times in a clockwise order so you know which to flip
  7. There should now be 4 medium sized pancakes with space in between them on the pan
  8. Toss a few sprinkles of nutmeg on top
  9. After 3.5 minutes on one side flip them over
  10. Let them cook for another 3.5 minutes or until done
  11. Should be mostly firm with a little give of softness
  12. Take them off the pan and place onto a plate
  13. Put the desired amount of maple syrup all over
  14. And enjoy!
